Hi James, hope you are feeling better now. I am a Onion Club member based in Singapore (subscribed in Aug 2021). If I understand correctly, I will get the physical comics (6 additional issues as you mentioned in one of your previous posts). I got the HOS edition (was the high point of that day!) but haven't got the membership card. I am a bit bummed to know that you might limit the "Onion Club" membership to US residents only. Maybe the folks like me who reside outside US can pay a bit more to account for shipping?

A bit late to the party here, but wanted to chime in with one of my favorite dishes to sous vide in the winter time. We used to make this at the restaurant where I was a head chef. It is a beef ragu with crushed, peeled tomatoes, thyme, rosemary & garlic with a dry red wine. We would serve it over polenta and it was rib sticking and very filling, perfect for cold weather. What was great for me as a chef was we would use the trimmings from our prime rib we would but into Rib Eye streaks and the trimmings from beef tenderloin we would but into filet. So in terms of protein you can use a wide variety of cuts or even use short ribs. You can make a big batch in vacuum sealed bags and then when you are in the mood, make your pasta, mashed potatoes or polenta and a few minutes in the microwave for your ragu and you are set!

I have barely been paying attention to the Empire newsletter - a thing I really like and pay for - so I almost didn't expect the House of Slaughter issue, and I totally didn't expect the Christmas cards along with the membership card (I knew that one.) I feel like I almost shouldn't pay attention to the updates so it can keep being a surprise, but the mail at my place is fucked up so I should really start paying attention.

Anyone want to save James the trouble of telling me what's being sent out next? Did I read it was a Razorblades thing or is that something else?

Pillowman is SO GOOD. I saw it for the first time here in Chicago at Steppenwolf Theatre (also incidentally first home of August: Osage County and many other Letts plays; you should take in a show next time you're in Chicago).

Back to Mcdonagh, I want to say Beauty Queen of Leenane is my favorite otherwise, but The Lieutenant of Inishmore is SO DAMN funny, it's hard to top.

My movie of the year was LAST NIGHT IN SOHO. TITANE is in close second - incredibly thought provoking and queer but also very disturbing and hard to frame as a favourite, which is what I want from my horror tbh. LAMB won the award for movie with the highest number of sheep-human hybrids.

Hey James - Always enjoy reading what you are enjoying from books to movies and your mention of Brubaker is so on point. All of his work is amazing (IMO) but in addition to the fine titles you mentioned his Gotham Central series and the Fatale series are equally enjoyable. Happy New Year - cheers!! RF

Glad to see you bouncing back man. It feels like it's been a while. It's probably just me due to the extremely busy last few weeks I have had. I. Definitely excited for what's to come. On a side note, I am a weirdo like the rest of you and frequently read government lab tests and things of the nature. I thought I would share that I recently read a government medical study that explained how well licorice root extract works against Coronavirus strains. Might help if you have any lingering symptoms. I would recommend a reputable brand though because people throw all kinds of muck in dietary supplements. With that being said I am not a doctor! Lol. I need to grab siktc volume 3 and 4.. I have been slipping on checking for final order cutoffs and whatnot.

Unless you have one already, you are probably going to want a chamber vacuum sealer for use with that anova immersion circulator. Down the culinary rabbit hole ;) If you don't have it already, a wonderfully beautiful (possibly aspirational as some of it is complex) cookbook is Under Pressure by Thomas Keller.
